EPUB is the open ebook standard used by almost every reader except Kindle. Kindle uses its own formats: MOBI (oldest), AZW3 (KF8) and KFX (newest).
Since 2022, Send to Kindle accepts EPUB directly, so MOBI and AZW3 are mainly for copying books over USB. PDF keeps a fixed page layout - great for printing, less comfortable on small screens.
